This class is made possible through a project called Huertas, a community-based food access project that facilitates the planting of kitchen gardens on rural dairy farms with Latino/migrant farm workers and their families. Introduction to Baking with
Natural Sourdough
Wednesday, April 6, 2016 – 6:00pm to 7:30pm
City Market (map)
Discover the joys of baking with sourdough bread starter. You will learn how versatile (and forgiving) this living organism is and how you can put it to work in your favorite bread recipe. You can even use it for pastries! We will see the different stages of a starter, learn when it’s ripe and ready, and taste freshly baked slices of several varieties of sourdough bread. There will be plenty of time for discussion and questions, and every participant will go home with a starter culture to start his or her very own sourdough for home baking. Heike Meyer is the owner of Bee Sting Bakery in Fairfax, a small artisan bakery specializing in whole grain naturally leavened breads and pastries.

A Mosaic of Flavor: Congolese Poulet à la sauce d’arachide, Bananes plantain and Saka-Saka
Tuesday, April 12, 2016 – 5:30pm to 7:30pm
McClure Multigenerational Center (map)
This monthly series is a collaboration with the Vermont Refugee Resettlement Program. In April, we will be preparing two traditional dishes popular in the Democratic Republic of Congo. We will learn to make poulet à la sauce d’arachide, a rich chicken stew seasoned with onions, peppers, tomatoes and nutmeg and traditionally thickened with ground nuts or peanut butter. We will also make steamed plantains, which are a favorite accompaniment to the stew. We will also sample the famous Congolese dish Saka-Saka, a staple side dish made from cassava leaves, leeks, garlic and salted dry fish. Originally from Congo, Hélène Yangambi came to Burlington with her four daughters in 2014. Hélène loves to cook, but jokes that this was not always the case. When she was a teenager, she says she used to cry when her mother made her go into the kitchen to learn to cook. She learned to cook when she was 18 in preparation for getting married and now her husband and daughters confirm she is an exceptional cook. Hélène is excited to share the taste and flavors of Congolese food with class participants, especially her favorite dish, Saka-Saka.
