Demystifying Root Vegetables

Carrots are one root vegetable everyone enjoys snacking on raw. But have you ever tasted a freshly harvested Gilfeather turnip? Why not? In this class, we will taste a number of fresh root vegetables and decide which to cook and which to munch on raw. When it comes to cooking root vegetables, everyone knows they taste best roasted, but then what? And what’s the best way to roast a vegetable anyhow? Learn how to roast vegetables that are evenly roasted and deliciously caramelized. Enjoy the roasted vegetables with a variety of toppings and in a kid-pleasing mac-and-cheese. We will also make and enjoy root vegetable puree that can replace mashed potatoes or be turned into soup. Andrea Chesman is a food writer, cooking teacher and cookbook editor. Her recent cookbooks include The Pickled Pantry, Serving up the Harvest, and Recipes from the Root Cellar. She lives in Ripton, Vermont.

Join naturalist, herbalist, and registered dietitian Melanie Putz Brotz for a fall foray to seek and learn about edible wild plants in the Intervale. There are still good, nourishing roots and greens around as well as medicinal plants to appreciate in this season, so come join the adventure. Participants in this workshop will learn about abundant “weeds” that are high in vitamins, minerals, and other health-enhancing compounds. We will also talk about preservation techniques that can be used to store the medicinal and nutritive properties of the plants for the winter. Meet at the small parking lot on Intervale Road, on the right after the dirt road begins, by the entrance to the Rena Calkins Trail.

Can’t make it to the Oktoberfest in Munich this year to sample a real Bavarian Pretzel? No problem – you can make your own authentic soft pretzels at home! Learn how to make pretzels and pretzel rolls and with Heike Meyer of Bee Sting Bakery. In this class, you will learn about the history of pretzels (or “Brez’n” as they are called it in Bavaria), try your hand at the shaping technique and bake some Brez’n to take home. We will have fun exploring different types, shapes and tastes of this authentic German bread specialty, and you will go home with an authentic recipe. Heike Meyer is the owner of Bee Sting Bakery in Fairfax, a small artisan bakery specializing in naturally leavened breads and pastries. She grew up in Germany, where she leaned to bake in Berlin’s oldest biodynamic bakery.

This workshop will focus on growing a steady supply of fresh greens with only a cupboard and a windowsill. Ready to harvest in just 7-10 days, these greens are good in fresh salads, stir fries, and more! Peter Burke will demonstrate how to grow the bulk of your salad greens through the winter with sunflower, radish, buckwheat, pea and broccoli shoots used as examples. Everyone will take a planted tray home from class. Peter Burke writes and teaches about organic gardening at The Daily Gardener.
A Mosaic of Flavor: Iraqi Biryani

In this workshop in the Mosaic of Flavor series, we turn our attention to Iraq. Savory and slightly sweet biryani can be a side dish or main course. Suhad Murad shows us how to make this Iraqi favorite along with a semolina cake that will satisfy your sweet tooth. Suhad came from Iraq three years ago with her husband and three children. She is an amazing cook and thinks that it was her cooking that won her husband’s heart. Suhad’s recipes will be featured in the Vermont Refugee Resettlement Program’s upcoming cookbook, A Mosaic of Flavor.

Start making kombucha at home! Kombucha is a fermentation of sweetened tea. In this class we’ll learn how to make it and also discuss why fermented foods are so beneficial. Participants will take home a “scoby” (a starter culture) to get started. This class will be led by Suzanna Bliss, clinical herbalist, nutritionist, and founder of Rooted Wisdom in Middlesex.
