With this interactive and hands-on tour, we’ll explore the Produce and Bulk departments, learning a simple method for finding the best value on fruits, vegetables, grains, and beans by paying attention to the price per pound. You’ll learn tips for selecting and storing these foods at home to get the longest use out of them, develop a better understanding of Co-op sales, and get inspiring recipes to start cooking quick and affordable meals at home. No matter what kind of diet you follow, these pennywise tools help you stock your kitchen with variety of healthy, local, and even organic foods.

Sourdough Bread Class

Discover the joys of baking with sourdough bread starter. You will learn how versatile (and forgiving) this living organism is and how you can put it to work in your favorite bread recipe. You can even use it for pastries! We will see the different stages of a starter, learn when it’s ripe and ready, and taste freshly baked slices of several varieties of sourdough breads. There will be plenty of time for discussion and questions, and every participant will go home with a starter culture to start his or her very own sourdough for home baking. Heike Meyer is the owner of Bee Sting Bakery in Fairfax, a small artisan bakery specializing in whole grain naturally leavened breads and pastries.

 

Preserved Lemons

Many Moroccan and Middle Eastern recipes call for preserved lemons, lemons that have been pickled in salt and their own citrus juices. It’s a simple but fascinating process using the lacto-fermentation method of food preservation that adds wonderful flavor to recipes. Learn how to make preserved lemons and other types of preserved citrus, take a jar home, and see how they’re used in delicious cooking with Jason Frishman, fermentation instructor and co-owner of the FolkFoods business at the Burlington Summer Farmer’s Market.

 

Urban Wildlife Tracking

Animals tell the stories of their lives by the tracks they leave behind, each writing its own unique “track signature”, as well as a narrative of their travels, on snow-covered landscapes. With the opportunity to literally walk in their paw prints, the observant naturalist is given the opportunity to gain insights into the natural history of both common, as well as normally elusive, woodland denizens. In this introductory workshop, using sand-filled trays and plaster casts, participants will learn basic track and track pattern characteristics of some of the commonly encountered, winter-active, Vermont mammals. As a field biologist, John Jose has worked on amphibian and reptile, mammal, and avian management projects, including bald eagle, osprey, common loon, and river otter reintroduction programs. He enjoys sharing the mysteries and wonders of the natural world with others, including his enjoyment of winter wildlife tracking.

 

Luring Pollinators to Your Garden

The co-evolutionary processes that help feed humans can be linked to the intricate relationships between plants and their pollinators. In this class, we will discuss ways to lure pollinators to your gardens. We will discuss the best varieties to grow, how to propagate them and the relationship they have with their pollinators. Joann Darling is a native Vermonter whose life’s work is learning and teaching about the amazing gifts we receive from the plant world.

Square Foot Gardening is an easy way to plan and plant your garden, using permanent beds to maximize production in small spaces. Peter Burke will join us to discuss all aspects from planning to planting your garden, constructing raised beds, creating permanent paths, trellising, and methods to avoid a jungle of weeds in August! Peter has been using and teaching the Square Foot Gardening method since 1981.

 

Kids’ Cooking Class: Leprechaun Soup and Irish Soda Bread (ages 6-12)

We know there aren’t really leprechauns, even on Patrick’s Day, right? But if there were, wouldn’t these little green sprites love to eat a bowl of potato soup, spiked with some bright green color from fresh and tasty spring greens? We’ll make creamy potato soup that kids and leprechauns alike will enjoy, Irish soda bread, and a surprise dessert to entice the leprechauns to come to the “end of the rainbow.”

For kids ages 6-12 accompanied by an adult. When registering, please select a ticket for each child attending. Accompanying adults are free and do not need a ticket.

 

A Mosaic of Flavor: Bosnian Stuffed Breads and Baklava

Bosnian cuisine includes many flavors of the West and East, with culinary influences that spread from Austria all the way to Turkey and the Middle East. Join us as we make Bosnian spinach stuffed pitas (“pita sa zeljem”), with homemade pita dough. We will also make baklava, a classic dessert made of honey-drenched phyllo dough with chopped nuts. Ramiza Peco was born in Bosnia immigrated to the United States as a young woman in 1998. She is one of Vermont Refugee Resettlement Program’s most animated interpreters. Ramiza loves cooking for her family and for special birthday and holiday gatherings. A Mosaic of Flavor is a collaboration of City Market and the Vermont Refugee Resettlement Program.

Making your own lip balm is fun and easy!  In this hands-on workshop you will learn the basic steps to blending the perfect lip balm. You will leave with two different kinds of lip balm, as well as clear instructions and several recipes to experiment with at home. This class will be taught by Skye Ellicock, a lifelong herb student and educator.

Just like spring cleaning in our home after a long cold winter, many of us can benefit from a good internal spring cleaning too. A “cleanse” can help our bodies release harmful toxins which we are exposed to every day. By nourishing ourselves with a diet of whole foods and specific plant-based phytonutrients, we activate our bodies’ natural detoxifying system. Join us in learning the process and benefits of this springtime tradition. Tasting and recipes will be shared.

 

My Child and Me: A Touch of Maple (ages 0-5)

This class is especially for parents and caregivers with children under age 5. In this class, we’ll explore traditional foods and having fun in the kitchen as we engage our little ones in the process of learning how to mix, measure, and cook delicious and nourishing food. All the food served in this class will be organic, follow the rhythms of local farms, and will introduce traditional foods principles such as soaking grains, culturing dairy products, fermenting vegetables, making nourishing broths, and using fruit in probiotic beverages the whole family will enjoy. This class will explore recipes like Vietnamese rice paper rolls and banana coconut pudding that use just a touch of maple syrup. The class will be held at City Market this month.

For parents/caregivers and children up to age 5. When registering, please select a ticket for each child attending. Accompanying adults are free and do not need a ticket.

 

The Frugal Fridge

The Frugal Fridge tour complements the Pennywise Pantry shopping tour. This tour focuses on how to shop for healthy, affordable foods once you leave Produce and Bulk and enter the grocery aisles and perishables coolers. We’ll learn to become savvy label readers as we shop for nourishing, long-lasting foods that contain 5 ingredients or fewer. Have fun turning packages over to look at labels and compare prices across similar products. We’ll keep the pantry in mind for a few of these products, but spend the bulk of our time examining 5-ingredient choices for the fridge and freezer as we focus on dairy, eggs, meat and seafood, frozen veggies and fruit, breads, tortillas, and more.

 

Culinary, Medical, and Topical Preparations of Anti-Inflammatory Herbs

Mexican Cooking Class: Mole

Mole originated in the Oaxaca area of Mexico and is a mixture of many components that combine to form a rich, dark sauce that lends its flavor to numerous dishes. Toasted chilies, tomatoes, spices, nuts, seeds, raisins, and chocolate can all come into play in “mole negro.” Oaxaca was a crossroad for trade with Europe and Asia, so mole reflects the use of both native ingredients and those from far away. See photos from markets in Oaxaca, learn about traditional preparation methods, and make and eat mole with Adele Dienno, who has just returned from an extended stay in Oaxaca and taking cooking classes.
