Intro to German Holiday Baking

Food EducationThis event will be a traditional German Advent baking class and tasting, featuring a demo and hands-on instruction on some best known holiday specialties from Germany. In this class, we’ll introduce you to the rich history of German holiday baking. We will start with some history on traditional baking in Europe and how it changed over time. Then you will see a baking demo and – if you like – get your hands in the dough yourself! You will learn the basics of making much loved holiday pastries like Stollen, Lebkuchen, Zimtsterne and more. We will finish the class by enjoying some tea and the baked goods we made in class! This class will be taught by Heike Meyer, bakeress and founder of Brotbakery.

Fire Cider Making Workshop

Tibetan Cuisine: Momos

Food EducationMomos are a type of South Asian dumpling filled with vegetables, chicken or pork. In this class we will learn how to make two varieties, a vegetable and chicken momo, as well as a tasty sauce to accompany these delicious treats! This class will be taught by Kalsang Mentsang. Kalsang is Tibetan by origin, but was born in Nepal and raised in India. With her multicultural background, she loves to cook food that is influenced by all three countries. For the past 11 years, she has been running a small business called Tibetan Cuisine at the Burlington Farmers Market and lives in South Burlington with her husband and two daughters.

Pennywise PantryWith this interactive and hands-on tour, participants will learn how to shop for affordable, fresh, long-lasting, and nutritious foods at City Market. We will begin by exploring the Produce and Bulk departments, learning a simple method for finding the best value on fruits, vegetables, grains, and beans by paying attention to the price per pound. Then we will enter the Grocery aisles and Perishables coolers and learn to become savvy label readers as we shop for nourishing, long-lasting foods that contain 5 ingredients or fewer. No matter what kind of diet you follow, these pennywise tools will help you stock your kitchen with a variety of healthy, local, and even organic foods and develop a better understanding of Co-op sales.

DIY Holiday Shrubs & Simple
Syrups with Stonecutter Spirits

Food EducationJoin Martha Mack, Beverage Program Director for Stonecutter Spirits, as we learn how to make some of the holiday cocktail shrubs and simple syrups that Stonecutter currently features at Highball Social. Shrubs and simple syrups are easy to make, tons of fun to customize, and a great way to create your own ingredients for use in cocktails, mocktails, and other tasty beverages. Shrubs are a category of drinking vinegars, often infused with fruit, herbs, or spices. Simple syrups can be made with sugar (or other sweeteners) and are also often infused with fruit, herbs, or spices. Class participants will learn the history and basics of how shrubs and simple syrups are made, and how to use them in creative ways in drinks. Participants will get to make their own cold-pressed shrub to take home, along with their share of a simple syrup made by the group plus recipe cards and accoutrements for the perfect DIY holiday gift. Then, afterwards, anyone who wants to continue the fun can head next door to Highball Social to enjoy the cocktails in action!

A Mosaic of Flavor:
Somali Doro, Bris and Ager

Mosaic of FlavorThis monthly series is a collaboration with the USCRI Vermont Refugee Resettlement Program. For December’s class we welcome Ahmed “Kismayo” Omar, who will share with us his love of healthy Somali cuisine. Ahmed is a chef, online nutrition coach and personal trainer. He attended culinary school in Kenya before moving to Vermont with his family in 2014. Ahmed has developed a unique style of cooking that blends traditional Somali flavors and techniques with his own interest in food that is healthy, clean, seasonal and easy to prepare. Ahmed calls his style of cooking “healthy Somali fast food.” Ahmed will teach three delicious recipes that anyone can prepare at home: Doro, oven-roasted spiced chicken with peppers and onions; Bris, an oven-baked herb rice infused with cilantro, cumin and cardamom; and Ager, a traditional sautéed greens dish seasoned with onion, garlic and pepper. Ahmed will also teach how to plate and garnish the dishes for a beautiful presentation. Ahmed will be joined by his wife, Anita Omar, who will teach how to prepare traditional spiced tea, a staple of Somali hospitality.

No Fuss Kitchen:
Gluten Free Holiday Treats

Food EducationSettle in, cozy up, and join us for this hands-on class where we will explore the world of sweet and delicious gluten free baking, fit to celebrate the holidays of the season. Together we will explore gluten free treats, from variations of classic favorites like pies, to cookies, to naturally gluten-free alternative sweets. Our No-Fuss kitchen is all about having fun in the kitchen, stressing less, and making food that tastes great. The class will include a demonstration of two pie crust techniques, and then together, we will make two more recipes that you’ll be excited to share with friends and family. Along the way, you’ll learn easy-to-incorporate baking skills that you can use for celebratory and everyday recipes alike.

The Art and Science of Kombucha

Food EducationStart making kombucha at home! Kombucha is a fermentation of sweetened tea. In this class, we’ll learn how to make it and also discuss why fermented foods are so beneficial. Participants will take home a “scoby” (a starter culture) to get started. Note, this class will only go over the first or primary fermentation process. This class will be led by Suzanna Bliss, Licensed Acupuncturist, Nutritionist, Educator, and Director of Bliss Healing Acupuncture in Montpelier.

A Filipino Feast: Pancit Bihon,
Chicken Adobo, Putong Puti

Wednesday, December 19, 2018 – 5:30pm to 7:30pm

Food EducationJoin us for a Filipino feast! In this class, we will learn how to make three traditional Filipino dishes. The first, Filipino Adobo is the “national dish” and is meat or vegetables marinated and braised in soy sauce, vinegar and peppercorns. The second dish, Pancit Bihon is a Filipino adaptation of Cantonese Lo Mein, a stir fry of meat and vegetables tossed with rice noodles. Lastly, we will make Putong Puti, a rice flour muffin that is steamed instead of baked. This class will be taught by Maria Garrido. Maria was born and raised in Florida in a Chamorro and Filipino household. After living in Louisiana and San Francisco, she moved to Vermont in 2005 to attend the New England Culinary Institute (NECI) and was most recently at the Burlington School Food Project.
