Heal your gut with tasty autumn recipes. Stress, eating processed foods, and even medicines that are supposed to make you feel better can take a toll on your gut and leave you feeling bloated, gassy, and fatigued. Learn how to make incredibly tasty meals that heal your gut on all levels with probiotics, prebiotics, vitamins, minerals, and demulcents. In this class, we will prepare healing foods together and sit down to share the meal and talk. If you want to eat foods that give you energy instead of drain you (and learn how to make them at the same time), then this is the class for you. Come eat and be merry and healthy! This class is open to all, and is great for cancer survivors and caretakers, people with chronic illness, people who have taken antibiotics or steroids recently, or people with food intolerances.

Brio Coffeeworks Roastery Tour

City Market has partnered with Brio Coffeeworks to offer a special line of coffee, exclusively available at City Market. Included in the City Market blends are a dark, medium, light roast and decaf.  The beans are sourced from fair trade farms and roasted locally at Brio Coffeeworks’ facility on Pine Street. Come tour the coffee facility run by Nate and Magda Van Dusen and learn from them about the roasting process and the various methods of brewing coffee at home.

Lip Balms, Salves, and Massage Oils

Learn to use infused oils to make salves, lip balms and massage oils. We will use the arnica infused oil made in last month’s class to create a muscle rub, and the calendula infused oil to create a lip balm and massage oil. Participation in the previous class is not required, and we will briefly review the infused oil making process. Everyone will leave with recipes and samples.

The default to being sedentary can have a big impact on your health, but by standing up and moving more, you can improve your digestion, metabolism, and significantly reduce your risk for major health complications like heart disease and cancer. Baking with Ancient Grains

Sunday, November 1, 2015 – 11:00am to 1:00pm

For thousands of years, ancient grains and seeds have sustained civilizations around the world. This class will give an overview of some of the oldest grains and pseudocereals and how they can be incorporated into baking for improved flavor and health. Taught by a baker-anthropologist team, the class will cover the origins, history and traditional uses of einkorn, emmer, kamut, buckwheat, millet and corn. We will bake and sample a variety of recipes including pumpkin kamut pound cake, einkorn sourdough bread, buckwheat crackers and millet cornbread. The class includes a tasting lunch where we will sample the baked goods with seasonal toppings. Heike Meyer is the owner and founder of the brotbakery, a small artisan bakery and education project, focusing on handmade breads & pastries, traditional baking techniques and baking with all-natural leavening. Anna Mays is an anthropologist who enjoys researching and teaching about world culinary traditions, agricultural practices and the intersection between food, culture and well-being.

The Dish: Local = Accessible?

“Local” is a popular buzzword in our food system, but even if food is grown locally, does that mean it’s more accessible? According to US Census data, 13% of Vermont households are food insecure, meaning they don’t have access to enough food to meet basic needs at all times. While creating economic opportunities for Vermont farmers and food producers has been a major goal within our state, the development of the local food system hasn’t necessarily made food more affordable for people experiencing food insecurity. We’ll explore this multifaceted issue and discuss innovative approaches during a lively panel discussion with local food producers and representatives from organizations focused on alleviating food insecurity in Vermont.

With this interactive and hands-on tour, we’ll explore the Produce and Bulk departments, learning a simple method for finding the best value on fruits, vegetables, grains, and beans by paying attention to the price per pound. You’ll learn tips for selecting and storing these foods at home to get the longest use out of them, develop a better understanding of Co-op sales, and get inspiring recipes to start cooking quick and affordable meals at home. No matter what kind of diet you follow, these pennywise tools help you stock your kitchen with variety of healthy, local, and even organic foods. Each month, we’ll hand out recipe cards for a 4-serving meal for under $10.

A Mosaic of Flavor: Eritrean Injera, Yemesser Watt and Gomen

This monthly series is a collaboration with theVermont Refugee Resettlement Program. In November, we will be preparing two traditional dishes popular in Eritrea and Ethiopia. We will learn to make Yemesser Watt, a spicy lentil sauce made with onions, garlic and the East African spice berbere, as well as Gomen, a slow-cooked kale dish seasoned with tomato, garlic and jalapeno. We will also sample Injera, the teff and barley flatbread traditionally served with these dishes, and hear how Injera is made. Mulu Tewelde came to Vermont from Eritrea in 2006 and enjoys sharing her knowledge and love of Eritrean and Ethiopian cooking. Together with her friend Alganesh Michael, Mulu cooks for Ethiopian Night at ArtsRiot once a month and caters for private events.

Herbal Cocktails and Elixirs

In this deliciously decadent grown-up workshop, participants will learn the fine (and fun!) art of creating sumptuously impressive liquors and cordials from scratch. Release your inner mixologist with seasonal flavors like kahlua, apple-spiced bourbon, and ginger liquer, just in time for holiday gift making! Participants will make and take their own jar of apple-spiced bourbon. Must be 21+ to participate.
