The Dish: Restorative Agriculture

City Market and the Intervale Center have teamed up for their exploratory series called The Dish. With support from ArtsRiot, we host quarterly panel discussions to dive into hot food issues with the help of local experts.
When thinking about this Dish discussion, we are reminded of the quote: “fertile soil helps create nourishing food and, in turn, healthy people and robust communities.” According to Farmers without Borders, regenerative agriculture is any kind of farming that enables the restorative capacity of the earth, improving soil fertility, increasing food production, enhancing vibrant communities and fair economies, and respecting the ecology of the natural world. This lively panel discussion will highlight Vermont growers and farmers — from dairy and meat farmers to landscapers, and even native tree growers — who return more to the earth than they take from it. You’ll also learn how you can start to practice restorative agriculture right in your own backyard.

Taking Your Lacto-Fermentation
to the Next Level

In this workshop, we will begin with a review of basic fundamentals for lacto-fermentation of vegetables. With these foundations in mind, we can then discuss, taste and explore ideas for taking the next steps in fermenting. Topics to be discussed include: using spices for variations, making good use of leftover brine, small batch vs. large batch fermenting, creative uses for fermented foods in cooking, fermenting with the seasons, Samples and tasting of various fermented foods will be a part of the workshop.

Global meets local as Ammy Martinez brings usFricase de Pollo Cubano, or Cuban Chicken Fricassee, a Cuban chicken stew with fresh, locally-sourced ingredients. Bilingual in Spanish and English, Ammy is an expert on Cuban and Brazilian cuisine and is familiar with the Vermont agricultural landscape. This dish has French origins because of a Haitian migration to Cuba during the 1800s. In this recipe, you’ll find chicken that has marinated in spices and sour orange juice and then simmered in a rich tomato-based sauce with potatoes, olives and raisins. Learn how to make this delightful dish and enjoy tastes of the world with ingredients from your own backyard.

You’ll learn tips for selecting and storing these foods at home to get the longest use out of them, develop a better understanding of Co-op sales, and get inspiring recipes to start cooking quick and affordable meals at home. No matter what kind of diet you follow, these pennywise tools help you stock your kitchen with variety of healthy, local, and even organic foods. Flatbreads of the World

Humankind’s oldest, simplest and most remarkably varied form of bread, flatbreads, have been a staple of diets around the world for over 6,000 years. Taught by a baker-anthropologist team, this class will cover the history, culture and baking techniques of different flatbreads, including unleavened, sourdough, ancient grain and non-grain breads. Using a wood-fired oven, students will make a Tuscan focaccia known as Schiacciata; Naan, an Indian style flatbread made with yogurt; a popular Mediterranean chickpea-based griddle bread known as Farinata in Italy and Socca in France; and a double layer sourdough flatbread.
The class includes a tasting lunch where we will sample the breads with traditional and seasonal toppings. Heike Meyer is the owner and founder of the brotbakery, a small artisan bakery and education project, focusing on handmade breads & pastries, traditional baking techniques and baking with all-natural leavening. Anna Mays is an anthropologist who enjoys researching and teaching about world culinary traditions, agricultural practices and the intersection between food, culture and well-being.
Participants should plan on meeting onsite at Brot Bakery and providing their own transportation.
