Dehydrating is a great way to preserve late summer fruits and vegetables like apples, pears, grapes, melons, tomatoes, kale, broccoli, herbs, and more! Using a dehydrator, Peter Burke demonstrates how to dry a variety of fruits, veggies, and herbs and gives samples, creative ideas, and recipes for fruit leathers, soup bases, trail mixes, and more. Peter is an avid gardener who teaches square foot gardening and indoor gardening classes.

Learn how to make authentic Bavarian soft pretzels and pretzel rolls with Heike Meyer of Bee Sting Bakery. In this class, you will learn about the history of pretzels (or “Brezel” as they are called in in German), try your hand at the shaping technique and make some to take home. We will have fun exploring different types, shapes and tastes of this authentic German bread specialty and you will go home with an authentic recipe and the skills to make your own pretzels in your home kitchen. Heike Meyer is the owner of Bee Sting Bakery in Fairfax, a small artisan bakery specializing in whole grain naturally leavened breads and pastries.

When Nagham Nasser was an English teacher in Syria she would cook classic Middle Eastern dishes for international guests. She often prepared Makloba (literally translated means “flip upside down”), which is a goat meat dish prepared with eggplant, tomato, potato, onion and rice and seasoned with garlic, cinnamon and green ginger with a touch of yogurt. This is a meal served at special family gatherings throughout the Middle East. A Mosaic of Flavor is a collaboration with the Vermont Refugee Resettlement Program. This series highlights flavorful food from other cultures and how it unites families and friends.

This class is especially for parents and caregivers with children under age 5. In this class, we’ll explore traditional foods and having fun in the kitchen as we engage our little ones in the process of learning how to mix, measure, and cook delicious and nourishing food. All the food served in this class will be organic, follow the rhythms of local farms, and will introduce traditional foods principles such as soaking grains, culturing dairy products, fermenting vegetables, making nourishing broths, and using fruit in probiotic beverages the whole family to enjoy.  The class is held in the family-friendly McClure Multi-Generational Center. For mothers/caregivers and children up to age 5.

Italian Cooking Class: Potato Gnocchi, Pesto, and Homemade Marinara Sauce

Make and eat a delicious Italian meal with chef Antonino DiRuocco from Capri, Italy. Gnocchi are small Italian dumplings that grace the menus of many Italian restaurants but take a little skill to learn to make. Antonino will share his technique for perfect and pillowy potato gnocchi, along with homemade pesto and real Italian marinara sauce. A chef at Villa Tragara Ristorante (now Michael’s on the Hill), he has won numerous awards, and has been featured in local newspapers for his rustic and traditional Italian fare.

Gluten is a protein found in many grains. It is a well known fact that gluten sensitivities and the occurrence of celiac disease have increased in recent years. The idea that gluten sensitivities are related only to structural imbalances in the gastrointestinal tract has been now proven to be inaccurate. These are complex issues and need to be understood to help with treatment and management. This class will discuss the definition of gluten sensitivities, how it is different from celiac disease, its diagnosis, traditional treatments, the alternative remedies available and how to live gluten free. Dr. Gregory Giasson DC, MSACN, MS runs Alternative Roots Wellness Center in Essex Junction where he offers holistic chiropractic and nutrition counseling services to help people get their health back into their own hands.

The Frugal Fridge tour complements the Pennywise Pantry shopping tour. This tour focuses on how to shop for healthy, affordable foods once you leave Produce and Bulk and enter the grocery aisles and perishables coolers. We’ll learn to become savvy label readers as we shop for nourishing, long-lasting foods that contain 5 ingredients or fewer. Have fun turning packages over to look at labels and compare prices across similar products. We’ll keep the pantry in mind for a few of these products, but spend the bulk of our time examining 5-ingredient choices for the fridge and freezer as we focus on dairy, eggs, meat and seafood, frozen veggies and fruit, breads, tortillas, and more.

Empanadas are a delicious pastry common in South America, similar to a savory turnover in the United States. They can be filled with endless variations, such as beef, chicken, cheese, corn, sweet potato – and even jam! Another variation is that they can be fried or cooked in the oven. In this class, we will make two kinds of empanadas, vegetarian and beef, with homemade empanada dough made by Constancia Gomez. Constancia hails from Bueons Aires, Argentina, and teaches Spanish language, music, and Latin dance. (She has taught students ages 5-90 years old to make empanadas!) In her spare time, she cares for her flock of 45 goats.
