Discover the joys of baking with sourdough bread starter. You will learn how versatile (and forgiving) this living organism is and how you can put it to work in your favorite bread recipe. You can even use it for pastries! We will see the different stages of a starter, learn when it’s ripe and ready, and taste freshly baked slices of several varieties of sourdough breads. There will be plenty of time for discussion and questions, and every participant will go home with a starter culture to start his or her very own sourdough for home baking. Heike Meyer is the owner of Bee Sting Bakery in Fairfax, a small artisan bakery specializing in whole grain, naturally leavened breads and pastries.

Luxuriously Healthy Hair: Simple Hair Care Recipes

Herbs and essential oils can be used to promote hair and scalp health. Many of the commercially available products leave a residue on your hair that can dull its natural shine, and may even contain toxins. Good quality soaps, such as olive oil, can be used as a shampoo alone, or as the base ingredient in natural hair care remedies. Apple cider vinegar, diluted with water leaves hair soft and shiny, invigorates the scalp, and eliminates dandruff, all for mere pennies per application! If you are interested in making your own herbal shampoos, hair rinses, and scalp treatments then this workshop is for you. Includes recipes and samples. Joann Darling is a native Vermonter whose life’s work is learning and teaching about the amazing gifts we receive from the plant world.

Greg Giasson runs Alternative Roots Wellness Center in Essex Junction where he offers holistic chiropractic and nutrition counseling services to help people get their health back into their own hands.

This class is especially for parents and caregivers with children under age 5. In this class, we’ll explore traditional foods and having fun in the kitchen as we engage our little ones in the process of learning how to mix, measure, and cook delicious and nourishing food. All the food served in this class will be organic, follow the rhythms of local farms, and will introduce traditional foods principles such as soaking grains, culturing dairy products, fermenting vegetables, making nourishing broths, and using fruit in probiotic beverages the whole family will enjoy. The class will be held at City Market this month.
For mothers/caregivers and children up to age 5. When registering, please select a ticket for each child attending. Accompanying adults are free and do not need a ticket.

A Mosaic of Flavor: Congolese Fish and Foufou

Bruno Kombo was the chef and owner of Bruno’s Place in Brazzaville, Congo. Now he works at Roland’s Place/The Old Lantern in Charlotte and the Skinny Pancake. He will show us how to make African fish in a tomato, scallion and garlic broth. In addition, he will help us make a big pot of foufou (cassava), Congolese-style, to dip in the broth. Bembe music will transport us to Equatorial Africa and might even inspire some dancing – which is what Congolese always do when they get together to feast. A Mosaic of Flavor is a collaboration of City Market and the Vermont Refugee Resettlement Program.

This workshop will focus on growing a steady supply of fresh greens with only a cupboard and a windowsill. Ready to harvest in just 7-10 days, these greens are good in fresh salads, stir fries, and more! Peter Burke will demonstrate how to grow the bulk of your salad greens through the winter with sunflower, radish, buckwheat, pea and broccoli shoots used as examples. Everyone will take a planted tray home from class. Peter Burke writes and teaches about organic gardening at The Daily Gardener.
Backyard Urban Sugaring

Join Jim Gorman in his presentation on how to tap and produce maple syrup in an urban setting. Unlike Winnie the Pooh, the urban sugar maker does not require a 100-acre wood! Jim will demonstrate how to tap a single tree and how to use the Native American technique of freeze concentration to reduce boiling time. He will also provide information on producing syrup for the least amount of cost. Jim comes from a multigenerational Vermont family and now lives in Burlington. He learned his sugar making at the family farm, where it was an annual affair to produce maple syrup.
Italian Cooking Class: Homemade Scialatelli Pasta with Butternut Squash

Scialatelli is from is a type of long, fettuccine-like pasta originally from Naples, made with a rich dough of flour, milk, and eggs. The pasta dough is rolled out by hand and sliced. We will serve it with a seasonal mixture of butternut squash, shrimp, Swiss chard, and beet greens (we will make a vegetarian version, as well). Antonino DiRuocco from Capri, Italy was formerly a chef at Villa Tragara Ristorante (now Michael’s on the Hill) and has won numerous awards for his rustic and traditional Italian fare.

The Frugal Fridge tour complements the Pennywise Pantry shopping tour. This tour focuses on how to shop for healthy, affordable foods once you leave Produce and Bulk and enter the grocery aisles and perishables coolers. We’ll learn to become savvy label readers as we shop for nourishing, long-lasting foods that contain 5 ingredients or fewer. Have fun turning packages over to look at labels and compare prices across similar products. We’ll keep the pantry in mind for a few of these products, but spend the bulk of our time examining 5-ingredient choices for the fridge and freezer as we focus on dairy, eggs, meat and seafood, frozen veggies and fruit, breads, tortillas, and more.
Kombucha

Start making kombucha at home! Kombucha is a fermentation of sweetened tea. In this class we’ll learn how to make it and also discuss why fermented foods are so beneficial. Please bring a wide-mouth half-gallon Mason jar (or even a quart-size yogurt container) with a lid so that you can take home a “scoby” (a starter culture) and get started. This class will be led by Suzanna Bliss, clinical herbalist, nutritionist, and founder of Rooted Wisdom in Middlesex.
