An Introduction to Traditional Diets

Dietary practices that focus on ‘ancestral health’, among them the Paleo Diet, are growing in popularity. They can be more nutrient dense than modern diets, may include important micronutrients lacking in commonly consumed processed foods and can also reduce chronic inflammation and enhance gut health. But beyond the gimmicks and oversimplifications inherent in some of these popularized ancestral diets, what did ancient and traditional peoples actually eat and what value can we glean from their eating patterns? Dr. Eric Garza, leader of the Burlington Chapter of the Weston A. Price Foundation, will lead this class.

Indoor Salad Gardening

Learn how grow an indoor salad garden with Peter Burke! This workshop will focus on growing a steady supply of fresh greens with only a cupboard and a windowsill.  Ready to harvest in just 7 to 10 days, grow greens that are both good for fresh salads and to cook in a stir fry!  Whether it is winter or you are living in an apartment, there is no reason to not to have a garden. Peter Burke will show you how to grow the bulk of your salad greens indoors, about 12-14 ounces a day!  Great for you locavores out there, there is nothing more local than your own windowsill.  The workshop will outline general techniques for many varieties of greens, and everyone goes home with their own planted tray to sample.

Gifting for Parents and Families

In this fun hands-on playshop, kids and their grownups will learn how to make their own sage and easy aromatherapy bath salts and dream pillows! Recipes and materials for these fun gift-giving ideas will be included. This workshop will be led by Jessica LaBrie, wise woman, integrative herbalist, aromatherapist, and owner of Blackbird’s Daughter Botanicals. Children must be accompanied by an adult. When registering, please select a ticket for each child attending, as well as adults.

German Holiday Baking:
Old Traditions and New Variations

This class looks at baking traditions in Germany and Central Europe, but also new ways to do this—using natural fermentation or preparing the familiar classics like Stollen, Lebkuchen, and Christmas Cookies vegan, raw, or with nut flours! It’s a fun class with lots of tasting and exploring. No baking skills are required to attend! This class is taught by Heike Meyer, the owner and found of the brotbakery (www.brotbakery.com), a small artisan bakery and education project, focusing on hand-made breads and pastries, traditional baking techniques, and baking with all-natural leavening.

Crafty Soaps for the Holidays

With this interactive and hands-on tour, we’ll explore the Produce and Bulk departments, learning a simple method for finding the best value on fruits, vegetables, grains, and beans by paying attention to the price per pound. You’ll learn tips for selecting and storing these foods at home to get the longest use out of them, develop a better understanding of Co-op sales, and get inspiring recipes to start cooking quick and affordable meals at home. No matter what kind of diet you follow, these pennywise tools help you stock your kitchen with variety of healthy, local, and even organic foods.

A Mosaic of Flavor: Yemeni Roz Ma’ Dajaj and Tabikh Bamia Ma’ Dajaj

A Mosaic of Flavor

This monthly series is a collaboration with the Vermont Refugee Resettlement Program. In December, we will be preparing two traditional dishes from Yemen. We will learn to make Roz Ma’ Dajaj, a popular rice and chicken dish that is seasoned with tomatoes, onions, cilantro, hot peppers and a blend of spices. There are many versions of this main dish and it’s so popular it is served almost daily in Yemen. We will also learn to make Tabikh Bamia Ma’ Dajaj, an okra and chicken stew sauce that is traditionally served with bread. Seham Alsakkaf is from Yemen and came to Vermont 9 months ago. She loves to cook and learned her love for Yemeni cooking from watching her mother cook. Seham lives in Winooski with her husband and 15-month-old son.
