Baking with Ancient Grains

Sunday, November 1, 2015 – 11:00am to 1:00pm

For thousands of years, ancient grains and seeds have sustained civilizations around the world. This class will give an overview of some of the oldest grains and pseudocereals and how they can be incorporated into baking for improved flavor and health. Taught by a baker-anthropologist team, the class will cover the origins, history and traditional uses of einkorn, emmer, kamut, buckwheat, millet and corn. We will bake and sample a variety of recipes including pumpkin kamut pound cake, einkorn sourdough bread, buckwheat crackers and millet cornbread. The class includes a tasting lunch where we will sample the baked goods with seasonal toppings. Heike Meyer is the owner and founder of the brotbakery, a small artisan bakery and education project, focusing on handmade breads & pastries, traditional baking techniques and baking with all-natural leavening. Anna Mays is an anthropologist who enjoys researching and teaching about world culinary traditions, agricultural practices and the intersection between food, culture and well-being.

The Dish: Local = Accessible?

“Local” is a popular buzzword in our food system, but even if food is grown locally, does that mean it’s more accessible? According to US Census data, 13% of Vermont households are food insecure, meaning they don’t have access to enough food to meet basic needs at all times. While creating economic opportunities for Vermont farmers and food producers has been a major goal within our state, the development of the local food system hasn’t necessarily made food more affordable for people experiencing food insecurity. We’ll explore this multifaceted issue and discuss innovative approaches during a lively panel discussion with local food producers and representatives from organizations focused on alleviating food insecurity in Vermont.

Learn how to shop for fresh, long-lasting, and nutritious foods in Produce and Bulk. With this interactive and hands-on tour, we’ll explore the Produce and Bulk departments, learning a simple method for finding the best value on fruits, vegetables, grains, and beans by paying attention to the price per pound. You’ll learn tips for selecting and storing these foods at home to get the longest use out of them, develop a better understanding of Co-op sales, and get inspiring recipes to start cooking quick and affordable meals at home. No matter what kind of diet you follow, these pennywise tools help you stock your kitchen with variety of healthy, local, and even organic foods. Each month, we’ll hand out recipe cards for a 4-serving meal for under $10.

A Mosaic of Flavor: Eritrean Injera, Yemesser Watt and Gomen

This monthly series is a collaboration with theVermont Refugee Resettlement Program. In November, we will be preparing two traditional dishes popular in Eritrea and Ethiopia. We will learn to make Yemesser Watt, a spicy lentil sauce made with onions, garlic and the East African spice berbere, as well as Gomen, a slow-cooked kale dish seasoned with tomato, garlic and jalapeno. We will also sample Injera, the teff and barley flatbread traditionally served with these dishes, and hear how Injera is made. Mulu Tewelde came to Vermont from Eritrea in 2006 and enjoys sharing her knowledge and love of Eritrean and Ethiopian cooking. Together with her friend Alganesh Michael, Mulu cooks for Ethiopian Night at ArtsRiot once a month and caters for private events.

An Introduction to Traditional Diets

Dietary practices that focus on ‘ancestral health’, among them the Paleo Diet, are growing in popularity. They can be more nutrient dense than modern diets, may include important micronutrients lacking in commonly consumed processed foods and can also reduce chronic inflammation and enhance gut health. But beyond the gimmicks and oversimplifications inherent in some of these popularized ancestral diets, what did ancient and traditional peoples actually eat and what value can we glean from their eating patterns? Dr. Eric Garza, leader of the Burlington Chapter of the Weston A. Price Foundation, will lead this class.

Indoor Salad Gardening

Learn how grow an indoor salad garden with Peter Burke! This workshop will focus on growing a steady supply of fresh greens with only a cupboard and a windowsill.  Ready to harvest in just 7 to 10 days, grow greens that are both good for fresh salads and to cook in a stir fry!  Whether it is winter or you are living in an apartment, there is no reason to not to have a garden. Peter Burke will show you how to grow the bulk of your salad greens indoors, about 12-14 ounces a day!  Great for you locavores out there, there is nothing more local than your own windowsill.  The workshop will outline general techniques for many varieties of greens, and everyone goes home with their own planted tray to sample.
