Fridge Foraging with Melissa Pasanen

Fridge-foraged dinners – for nights when you don’t want to shop, but the fridge and pantry are relatively empty. Join Melissa Pasanen to learn how to create dinner out of not much, use up random things tucked in the back of the fridge and pantry, and cut food waste to boot. With a list of pantry staples to keep on hand and two basic methods — Mexican-style bean bake and Mediterranean grain bowls — plus 7 ways to make eggs into dinner. Melissa has worked as a food and agriculture journalist and cookbook author for close to 20 years. She is currently a contributing writer to the food section of Vermont’s alt-weekly, Seven Days. Prior to that, she was food editor for Vermont Life magazine and a regular contributor to the Burlington Free Press. She has authored or co-authored three cookbooks, including the New York Times notable cookbook, Cooking with Shelburne Farms: Food and Stories from Vermont. Her work has been published in The New York Times, USA Today, Saveur, EatingWell, and on Foodnetwork.com, among many others.

Knife Skills with Maria Garrido

Join us to learn basic knife skills to gain confidence in the home kitchen! We’ll cover the different knife types, types of cuts, and how to maintain knives at home. We provide knives for class, but feel free to (safely!) bring your knife from home for discussion. All students will get to practice cutting a variety of foods as we prepare a class meal of Thai vegetable stir-fry and mango salsa. This class will be taught by Maria Garrido. Maria was born and raised in Florida in a Chamorro and Filipino household. After living in Louisiana and San Francisco, she moved to Vermont in 2005 to attend the New England Culinary Institute (NECI) and was most recently at the Burlington School Food Project.

Junior Iron Chef

Jr Iron Chef VT is a statewide culinary competition organized by Vermont FEED challenging teams of middle and high school students to engage in improving their own health and the health of their community by creating nutritious, local dishes to inspire school meal programs.
Pennywise Pantry Tour
Thursday, March 19, 2020 – 10:00am to 11:00am

With this interactive and hands-on tour, participants will learn how to shop for affordable, fresh, long-lasting, and nutritious foods at City Market. We will begin by exploring the Produce and Bulk departments, learning a simple method for finding the best value on fruits, vegetables, grains, and beans by paying attention to the price per pound. Then we will enter the Grocery aisles and Perishables coolers and learn to become savvy label readers as we shop for nourishing, long-lasting foods that contain 5 ingredients or fewer. No matter what kind of diet you follow, these pennywise tools will help you stock your kitchen with a variety of healthy, local, and even organic foods and develop a better understanding of Co-op sales.

Herbs for Spring Rejuvenation

It may not feel like spring yet, but the days are getting longer and the sun is stronger! March is a great time of year to tune into the awakening energy of spring for thawing, revitalizing and detoxifying the body, mind and spirit. Join herbalist Katherine Elmer from Railyard Apothecary and Spoonful Herbals for this experiential class to explore the benefits of spring tonic herbs and whole foods nutrition to awaken and support the body’s intrinsic vitality and “spark”.
