How will farmers adapt to the environmental upheaval and keep food growing through fast-shifting weather patterns? How will these changes ripple through the distribution chain — and how will they affect what Vermonters eat in restaurants, institutions and at family tables?

Join a panel of local experts for a lively discussion on the challenges and rewards of growing food in a changing climate — now and into the future.

Join the clinical interns fromVermont Center for Integrative Herbalism (VCIH) for a personalized, confidential consultation, and leave with valuable information tailored to suit your specific needs. Students are supervised by professional herbalists and have already completed over 1000 hours of training. VCIH offers consultations and herbs using a sliding-scale and gift model–this means you only pay what you can, when you can. All sessions are held on Mondays and last two hours. By appointment only. Cooking with Indian Spices

Together we will prepare an Indian rice pilaf, a nutritious lentil soup and a quick vegetable dish. Participants will learn that cooking with spices in Indian cuisine can be quite simple with delicious and healthy results. During the class we will go over benefits of spices and how they aid in our digestion. We will also learn how recipes don’t have to be time consuming to offer health benefits. Akshata Nayak MSACN, MS is a Clinical Nutritionist who practices at Alternative Roots Wellness Center in Essex Junction.

Magnificent Microbes, Healthy Guts

Join local food and health enthusiast Eric Garza for a workshop on the role that microbes play in our gut health. Eric will discuss cutting edge research linking gut microbe diversity with chronic ailments like obesity and neurodegenerative conditions. He will also talk about key foods we can add to our diets to feed and increase the prevalence of particular microbes known to enhance gut health and will note foods that increase the prevalence of gut bugs known to contribute to poor gut health. Samples will be provided as well as recipes to try at home!

A Mosaic of Flavor:
Bosnian-Herzegovinian Palacinke

This monthly series is a collaboration with theVermont Refugee Resettlement Program. In May, we will be preparing Bosnian coffee and palacinke, Bosnian pancakes, with savory filling of sour cream and cottage cheese and sweet filling of fresh fruit. Nada Popovac came from Sarajevo in 1998. She is a traveler, has worked at Vermont Refugee Resettlement Program for 16 years, is the “office mama,” a proud mother and grandmother and loves Vermont.

A Wild Taste of Spring

Eric will bring in resources participants can use to identify a few wild edibles and will discuss the health benefits that they afford. He will also offer a few tasteful recipes that offer ways to integrate strong-tasting wild edibles into more common fare.

Brew Methods

City Market has partnered with Brio Coffeeworks to offer a special line of coffee exclusively available at City Market. Included in the City Market blends are a dark, medium, light roast and decaf.  The beans are sourced from fair trade farms and roasted locally at Brio Coffeeworks’ facility on Pine Street. Come tour the coffee facility run by Nate and Magda Van Dusen and learn from them about the roasting process and the various methods of brewing coffee at home. Tyler Van Liew, Coffee Educator, will demonstrate various brew methods including a French press, chemex, pour-over, full-immersion brewers, aeropress, and espresso.

Participants will create three of the recipes to take home. Leading this hands-on workshop is Jessica LaBrie, a passionate herbalist, Wise Woman, and owner of Blackbird’s Daughter Botanicals.

Pennywise Pantry Tour

With this interactive and hands-on tour, participants will learn how to shop for affordable, fresh, long-lasting, and nutritious foods at City Market. We will begin by exploring the Produce and Bulk departments, learning a simple method for finding the best value on fruits, vegetables, grains, and beans by paying attention to the price per pound. Then we will enter the Grocery aisles and Perishables coolers, to learn to become savvy label readers as we shop for nourishing, long-lasting foods that contain 5 ingredients or fewer. No matter what kind of diet you follow, these pennywise tools will help you stock your kitchen with variety of healthy, local, and even organic foods and develop a better understanding of Co-op sales.

Join us for a volunteer work party at Jericho Settlers Farm in Jericho, VT! We will help Christa and her crew plant flowers and herbs, and we’ll also get a farm tour of their hoophouses, greenhouse, and farmstand. Please come prepared for the weather with appropriate layers, sturdy shoes, work gloves, and water. Light snacks will be provided.  City Market Member Workers can earn hours for their time.
